What do these figures mean?
Humidity <20% — the honey is ripe and has a long shelf life. Diastase >8 — natural enzymes preserved (the honey has not been heat-treated). HMF <40 mg/kg — the honey is fresh and unprocessed. A low HMF level indicates that the honey is neither stale nor heat-treated.

🌾 Pollen analysis

Microscopic pollen analysis (melissopollenology) is used to identify the plants from which the honey originates. This determines the honey’s flavour, colour and character.

Low sucrose content <0.5% proves that the honey has not been processed or diluted with sugar. Natural honey consists mainly of fructose and glucose, which are easily digestible.

Great-grandfather's barn — our history

This hand-cranked honey extractor belonged to my great-grandfather and symbolises our family’s long tradition of beekeeping. These days we use more modern equipment, but we still adhere to the same principles — gentle handling and unpasteurised honey.
